NYC: Wallsé (⭐️)


Pretzel

The pretzel was light and crunchy on the outside. It had a slight sweetness as well and was burning hot. However, some of the parts with salt were too salty. 7/10

Foie Gras Pâté

The foie gras was slightly gamey but very rich. The strawberry sorbet and jelly complimented this well and toned down the gaminess. The brioche was soft and sweet with a slight crispness from the toasting. However, this dish was quite simple and not very innovative in textures or flavors. 7/10

Asparagus

The asparagus flavor really dominated this dish, but the butter complimented that flavor well. The dumplings had a nice slightly sticky texture, while the asparagus was crunchy. Nothing special but good. 6/10

Rabbit Spätzle

The dough was very soft and slightly sticky, and the crunchy carrots and pull-apart rabbit rounded out this dish in terms of texture. The dairy umami flavor worked well with the sweetness of the vegetables and rabbit. A very good and hearty dish, but still simple. 8/10

Wiener Schnitzel

The schnitzel was perfectly fried, being not greasy at all. It was slightly crispy and very flaky on the outside. The veal itself was juicy and tender. The accompaniments did not really add any interesting flavors to the schnitzel, but they helped balance out the dish. 9/10

Short Rib

The short rib was very tender and fatty, and the sauce added so much complexity with sourness, umami, earthiness, and savory. The sides were well-balanced because the carrot absorbed the flavor of the sauce and the puree had a slight sweetness to make this even more complex. However, the sauce was a bit too heavy. 9/10

Duck Breast

The duck was way too tough. The skin was crispy but the duck was very fibrous and hard to chew. The gravy and potatoes were generic. The semolina was terrible because of its texture. 1/10

Apple Strudel

The strudel itself was not too sweet, but the ice cream helped make it sweeter. The outside was very crispy and flaky while the inside had a moist filling. The ice cream was very strong in its dairy and vanilla flavor, making it pair pretty well with the strudel. A nice dessert, but it was similar to an elevated and less sweet apple pie. 7/10


Final review: The food was mostly solid, but it was more hearty and less sophisticated. The service was slow, but it was friendly. However, I don’t believe that this restaurant is Michelin star quality. 6/10
